Polenta, pear and olive oil cake for a lazy Sunday afternoon. I was having a lazy Sunday afternoon and a request was made that went something like this; is there anything sweet to eat? answer, no not really, fresh fruit is an option. silence..... what about cake?   mmmm, well that wasn't in the list of options.  reply, Ohhh. ohhhh mmm.  silence.  so I went out to the kitchen and had a look in the cupboard, not much in there, fruit bowl, fridge, back to the cupboard. Ha! polenta, extra virgin olive oil, fridge, eggs, Greek yoghurt, fruit bowl, lemon and pears.  So here it is, my Lazy Sunday polenta, olive oil and pear cake. try it and share it with friends, all comments appreciated. with kind regards, Peter
  • 400 g polenta + 40g polenta for the crust sprinkle
  • Zest 1 lemon
  • 150g sugar
  • 1 heaped teaspoon baking powder
  • 1 level teaspoon ground nutmeg
Mix all the above ingredients well with a fork
  • 3 large eggs
  • 100g yoghurt
  • 75ml extra virgin olive oil + 25ml for the baking tray
  • 1 teaspoon vanilla extract
  • 1 lemon juiced
  • 75 g honey + 75g honey for the glaze after baking
  • 2 fresh pears or apples peeled and diced
Mix all wet ingredients
  • Mix wet into dry and stir until a well combined batter is achieved
  • Oil a 20x40 cm tray and pour batter into the tray. The batter needs to be minimum 30mm deep and can be up to 60 mm deep
  • Sprinkle with the remaining 40g of polenta to form a crust
  • Bake at 170*c for 25 -30 min
When golden brown and firm to touch remove from the oven drizzle with honey and leave to cool. Serve warm with yoghurt. Note 75g of almonds can be added to the dry mix.
