I have been making this BBQ Essence since returning from a friend’s wedding in Texas in 1987. My goal then, was to capture that flavour memory of my trip and put an Aussie spin on it. The sauce shows vibrant fruit and spice blends which give this a truly memorable flavour and aroma. It can be used as a pour over, dipper, marinade, baste, deglaze essence and in stir fries.
Try basting and marinating salmon fillets for 24 hours with a table spoon of the sauce per serve, wrap in plastic and store in the fridge for 24 hours, then cook in a very hot oven or closed bbq for a few minutes. More recipe videos on this website.
