
Rocket salad with fetta and Italian Style Sweet Black Cherry Vinegar

- Flavour and texture fresh/ sweet / sour and creamy/ crunchy
- 150 g rocket leaves (can be substituted for any salad leaves)
- 6 cherry tomatoes
- 1 small avocado diced
- 1 stick of celery sliced
- 80 g fetta cheese ( Dodoni fetta is my preferred option, its made in Greece from sheep’s milk.’
- 40 ml Italian Style Sweet Black Cherry Vinegar
- Wash and dry all the fresh ingredients.
- Place rocket into a salad bowl.
- Cut tomatoes, avocado, celery, and fetta then sprinkle over the rocket.
- Dress with the Italian Style Sweet Black Cherry Vinegar
- Place salad onto serving plates and finish with a twist of black pepper.
- Figs and prosciutto ham
- Sliced pear and pecorino or parmesan cheese
- Walnuts, apple and salami
