Dear Fresh Friday friends,

This week’s theme is white cheese. ‘MMmmm’ I hear you say, what’s this all about?

Well, the particular cheeses I am focusing on are goat’s cheese from Meredith Dairy, a spectacular soft white cheese with a lovely creamy texture and elegant flavour. Next is fetta, a sheep’s milk cheese, slightly chalky texture with a big salty flavour profile. Finally ricotta, this is a basket drained cheese with fluffy curds and gentle cows milk flavours.

All three cheese are rich in calcium and other important nutrients, they are also not very high in fats. So, here is the menu:
