Xanthan Gum RD is food-grade rapid-dispersible xanthan gum produced by fermentation of carbohydrate with Xanthomonas campestris. It is an excellent thickener, suspension agent, and stabilizer in various food applications including sauces, dressings, mayonaise, jams and creams. The product colour is a creamy yellow with granular texture. It is soluble in cold or hot liquids.

Usage 1-1.5% of total volume(litres)
Blend through a dry ingredient in the recipe like sugar or add in a fine stream to liquid while mixing with stick blender at low speed until incorporated. Rest for 5 minutes to fully hydrate, then belnd at high speed for 1-2 minutes.
