Dear Fresh Friday friends,

This week’s menu has a focus on fresh limes, currently in season, and the humble coconut. Years ago I spent a few months travelling in South India, visiting the eastern and western coastal areas and the hill stations in the central mountain region. I ate many meals in Kerala based around fish, herbs, spices, fruits and coconuts. The flavours left me with a very strong memory. So this week our main course and dessert are based on limes and coconut.
