Fresh Friday 15 March

Dear Fresh Friday friends.

Well it’s St Parick’s Day on Sunday, so this week’s menu is all about the flavours of Ireland.

We begin with six hour braised beef and Guiness, accompanied by colcannon – a wonderful potato mash with leeks, spring onions, cabbage, butter and milk. I am also making a soda bread scone.

Dessert is an Irish Coffee Trifle, splashed with Jameson, and topped with grated nutmeg.
