Dear Fresh Friday friends.

This weeks menu combines our Red Capsicum Finishing Vinegar and the Zesty Bruschetta Seasoning Sprinkle as a marinade for a baked fish fillet. The combination of flavours will work well with the other ingredients including preserved lemon and capers. The fish is accompanied by a selection of steamed vegetables and Kipfler potatoes with whipped dill butter.

The dessert is a play on Italian summer fruit budino or pudding. It’s a true collage of colours and flavours.
